Bruschetta Recipe



This is easy, reasonably healthy, and DELICIOUS! No cooking required, so it is perfect to make during warm or hot weather.


BRUSCHETTA


10 Roma tomatoes, diced
1 Tbsp minced garlic
2 Tbsp minced red onion
3/4 cup chopped fresh basil (a fistful)
1 tsp lemon juice
1/3 cup olive oil
Salt and pepper to taste
Baguettes or French bread cut diagonally and into 1/2 inch slices

Mix all ingredients. Let stand 15 minutes or more to let flavors blend. Toast the bread lightly. Serve at room temperature.

Note: Vary above-mentioned ingredients as you see fit. I am PRONE TO EXCESS (as you have probably noticed if you read my blog much), so I add more garlic, onion, basil and lemon juice until I think it is just right.

bruschetta! one of my MOST favorite things to eat....oh and as far as EXCESS....ah I eat until there is nothing left..10 gallon bowl of gazpacho? I could take that on no problem!

Awwwwww yeah! Me loves this stuff.
I actually use balsamic vinegar instead of lemon juice and salt, but I am a big vinegar fiend :) I must try the lemon juice option!

Once, I ran out of basil, so I replaced it with parsley! Suprisingly it still tasted really good!

I seriously ADORE bruschetta.

As a Sicilian, it is part of my heritage and a part of my diet. I can't get enough of it!

I seriously can't wait till tomatoes are back in season so I can make some of this yummy stuff!

Very yummy. It is also good when you put the salsa on the bread with some cheese then warm it in the oven.

This is our summer staple. Love it. And I made the shrimp ceviche you posted last week and it was a serious hit. And easy. Which was my favorite part! Hope your weekend faired well. :)

yes, pink bswear get one when i get my own place, haha. and this looks delish. my mom always makes me some, but just uses cheese, toms, green pepers, mushrooms, and more cheese.

that looks quite good. I've heard of it but never had it. Question, about the bread part, do you just dip into the concoction with your bread or do you spread it on the bread somehow?

I love bruschetta this way. I could eat this as a meal. Most of the time I find that restaurants can't make a good bruschetta - they either cook it so the tomatoes are soft and soggy or add too much wrong cheese. Shaune makes his the same as you and I love it!
