Roasted Pepper Gazpacho Recipe

Roasted Pepper Gazpacho


I found this recipe and decided to make it today, even though I had never eaten gazpacho before. It is quick and easy to make, no cooking required, and it is healthy and DELICIOUS!!!

Note: I tried to tempt the vegiphobe boyfriend with a bowl of this, and asked him if he had ever had gazpacho before. He said that gazpacho sounds like something you are inoculated against as a child. Grrrr. Fine. I'll eat it all!


Roasted Pepper Gazpacho

1 15 oz jar Mezzetta roasted peppers, coarsely chopped
4 Roma tomatoes, coarsely chopped
1 cucumber, peeled and chopped
1/4 tsp Jalapeno pepper, minced
1/4 cup green onions, chopped
salt and pepper
1 tsp ground cumin
1 tsp ground corriander
1 Tbsp fresh cilantro, chopped (OR MORE)
4 oz tomato juice (or just use ketchup)
1/4 cup extra virgin olive oil
3 Tbsp red wine vinegar


Place all ingredients except tomato juice, olive oil, vinegar, salt & pepper in a food processor and pulse. Pour mixture into a bowl. Add tomato juice, olive oil, vinegar; mix well. Season with salt & pepper to taste. Refrigerate and chill well. Serve.

Serving ideas: Garnish soup with cooked shrimp, or crab meat, and/or fresh avocado.

LOL, I just read your veggie post! The men in our life must've been separated at birth. Many times I've made what I thought would be a wonderful meal...only to have him ask, "where's the meat???"

Thanks for the recipe! This looks and sound delish. I might even get him to taste it. I did get him to eat pumpkin & pear soup (have you ever tried? it's sooo good) and he actually asked that I make it again so baby steps I guess :)

The only recipe I have for Gazpacho is the one heisted from Pedro Almodovar's film 'Women on the Verge of a Nervous Breakdown'...!

Share that with the boyfriend and see if he's willing to sip some cold soup then ;P

So funny... I was just telling my friend about a girl I knew who asked me what a gazpacho was, thinking it was a name of a Spanish music instrument... my friend was horrified there are people out there who've never heard of this dish. I might have to send this recipe to that person ;-) I on the other hand, love it. It's the ultimate summer dish... so refreshing! Thanks for posting... I'll have to try out this recipe ASAP! I think that gazpacho is one of those things you have to try before you make up your mind. It just sounds unappealing but done right it is delicious. This looks like a great recipe and I never thought of adding cold crab or shrimp to it.

Yum. I love gazpacho but never made it myself. Definitely going to try it.
