YUM YUM YUM. This is my new favorite salad. I have been making it a LOT lately. Delicious!
Baby Heirloom Tomato Salad
1 lb baby heirloom tomatoes, cut into halves
1 red bell pepper, chopped
1/2 an English cucumber (or 2 Persian cucumbers), chopped
Fresh basil, finely chopped
1-2 cloves of garlic, finely chopped
Red onion, sliced thinly
Garlic salt, to taste
Fresh ground pepper, to taste
1 Tbsp olive oil
2 Tbsp red wine vinegar or rice wine vinegar, whichever you prefer
Optional: Fresh ripe avocado, cubed
Wash and chop all veggies, plus chop basil, red onion and garlic. Add all ingredients to one bowl. Salt and pepper to taste. Add olive oil and vinegar. Stir. Let stand for 30 minutes, stirring occasionally, so that all flavors blend. Serve immediately and it will be gobbled up.
NOTE: This salad is especially delicious if you add fresh, ripe chopped avocado to it. YUM. Enjoy!
