Baby Heirloom Tomato Salad

YUM YUM YUM.  This is my new favorite salad.  I have been making it a LOT lately.  Delicious!

Baby Heirloom Tomato Salad

Ingredients:

1 lb baby heirloom tomatoes, cut into halves
1 red bell pepper, chopped
1/2 an English cucumber (or 2 Persian cucumbers), chopped
Fresh basil, finely chopped
1-2 cloves of garlic, finely chopped
Red onion, sliced thinly
Garlic salt, to taste
Fresh ground pepper, to taste
1 Tbsp olive oil
2 Tbsp red wine vinegar or rice wine vinegar, whichever you prefer
Optional: Fresh ripe avocado, cubed

Directions:

Wash and chop all veggies, plus chop basil, red onion and garlic. Add all ingredients to one bowl.  Salt and pepper to taste.  Add olive oil and vinegar.  Stir.  Let stand for 30 minutes, stirring occasionally, so that all flavors blend.  Serve immediately and it will be gobbled up.  

NOTE: This salad is especially delicious if you add fresh, ripe chopped avocado to it.  YUM.  Enjoy!


This recipe was wholeheartedly inspired by this recipe, but I am partial to my version.  :)

Yummy! We have a hard time finding heirloom tomatoes this time of year, even at the green grocers. So I will likely have to wait until summer for a salad as lovely as this one :( Several vendors at our local weekly market sell the most amazing heirloom tomatoes, but only in summer (they are all local growers).

Do you have a Sprouts or a Henry's near you? They carry those clamshell containers of the baby heirlooms all the time and often run great deals. I am going to make this the next time I go shopping. Yum!

yummeh, I'm making a veggie lasagna for my bf tonight..maybe I'll make this to go along with it. (I never have my camera with me when I'm cooking. so sad)

Please do not take offense, but it kind of surprises me that you would eat THIS HEALTHY. I mean, I know you're an adult and eat like one, but this is really really extreme. But perhaps I am partial because I eat like a twelve year old.

I love baby heirloom tomatoes and avocadoes.

Since I hate to cook, I've been eating a lot of salad too, varations of boiled eggs, tomatoes, whatever I have lying around, all with yummy ranch dressing. Which probably cancels out the health benefits. But I've now switched to light ranch dressing...

not even sure what a heirloom tomato is lol! and english cucumber? so would that be a normal cucmber for me? what if its an irish cucumber? would that be a substandard slightly envious of the english cucumber-cucumber?

mmmmm....this looks amazing. I'm not a huge tomatoes fan, but I can eat them when they're chopped up and small. I've had too many bad experiences with yucky soggy tomatoes..now they're slightly tainted. I love salsa and dips and sauces with tomatoes though.
